Giovanni Canonica Barolo Paiagallo 2019 (750ml)

Giovanni Canonica is one of the most revered natural winemakers in Piedmont. Working out of his home cellar in Barolo, Canonica farms organically with horse and hand, fermenting spontaneously in wooden vats with native yeasts and zero additives. His small production bottlings are prized by collectors for their raw authenticity, emotional depth, and classical transparency.

Barolo Paiagallo 2019 comes from Canonica's historic 1.5-hectare plot in the Paiagallo cru, situated directly above the village of Barolo. The 2019 vintage provided ideal conditions for Paiagallo's eastern exposure and clay-limestone soils, yielding a wine of extraordinary aromatic clarity and classic vitality.

Tasting Profile: Luminous ruby red. High-toned aromatics of sour red cherry, dried rose petals, orange zest, leather, and crushed stone. Vibrant and expressive on the palate, with crunchy red fruit, mouthwatering acidity, and classic fine-grained tannins that resolve into a savory saline finish.

Decant 45 minutes before serving at 16–18°C. Excellent alongside roasted lamb chops, braised short ribs, wild mushroom tagliatelle, or mature cheeses.
