From their base in Castiglione Tinella—Piemonte’s Grand Cru village for Moscato—Hiroto and Rie Sasaki redefine Moscato Bianco’s potential. Having lived in Rome since 1997, Hiroto purchased an old winery here, launching his first vintage in 2018 using estate old vines. Inspired by Friuli’s Dario Prinčič, he harvests grapes at peak ripeness while retaining vibrant acidity for skin-macerated whites. He later expanded to craft uniquely elegant Barbera, Nebbiolo, and Freisa from nearby sites—a style unseen elsewhere in Piemonte. All wines age at least two years (Hiroto’s benchmark for drinkability): whites in fiberglass vats, reds in old tonneaux. The impeccably organized, garage-sized winery reflects his garagiste ethos—echoing the precision of a top-tier omakase sushi master.
