Stefano Occhetti "Bolle" Metodo Classico 2021 (750ml)

Stefano Occhetti, a former civil engineer turned family vigneron in the Roero, made his first vintage in 2019 from his grandfather's old vines. Fermentation is natural, in concrete; ageing in large oak — the same care goes into his sparkling wine. Proof that Piemonte bubbles deserve a place at any serious table.

Bolle is his Metodo Classico from 2021: time on lees gives a fine bead and bakery notes over a dry, citrus-fresh finish.
