Stella Binaria produces small-lot natural wines in Castelnuovo dell'Abate, southern Montalcino. Taking inspiration from binary stars, the estate contrasts two pure Sangiovese cuvées—"Il Giorno" (vibrant and sunlit) and "La Notte" (brooding and nocturnal)—to highlight the versatility and depth of Montalcino terroir.

Toscana Rosso "La Notte" 2022 represents the dark, contemplative nighttime dimension of 100% Sangiovese. Sourced from warm, low-yielding 2022 harvest parcels, the grapes undergo extended skin maceration and traditional oak aging to build rich savory texture and depth.

Tasting Profile: Deep crimson-ruby color. Intensely aromatic with black cherry, dried fig, balsamic rosemary, black tea, and crushed limestone minerality. Rich and velvety on the palate, balancing concentrated dark fruit with structured, fine-grained tannins and a long, savory mineral finish.

Serve at 15–17°C after decanting for 30–45 minutes. Exceptional with slow-cooked ragù, grilled lamb chops, wild mushroom risotto, and aged Tuscan cheeses.

Stella Binaria, Montalcino

Stella Binaria is a labor of love nestled in Castelnuovo dell’Abate, beneath the medieval Abbazia di Sant’Antimo. This 0.37ha slope—untouched by tractors—is hand-worked with organic care (copper, sulfur, sweet orange oil). Their 100% Sangiovese duo, “La Notte” (2022) and “Il Giorno” (2023), contrasts extremes: the former brooding and balsamic, the latter sunlit and vibrant. Born of sweat, starry collaboration, and Tuscan terroir, Stella Binaria crafts wines for souls who savor depth and joy.
