The second vintage from Vaira Aurelj, Barolo Fossati 2021 showcases a remarkable harmony of elegance and approachability that belies its youth.

Vineyard
The Fossati cru sits at 480 meters elevation with south-east exposure, where calcareous clay and sandy soils impart distinctive character to the Nebbiolo vines.

Winemaking
Hand-harvested grapes are carefully de-stemmed without crushing, then fermented whole-berry (acino entiro) with indigenous yeasts in open tini under controlled temperatures. Following gentle pressing, malolactic fermentation takes place in oak.

Aging
The wine matures for 18 months in a combination of Slavonian oak barrels and tonneaux before bottling.

Production
Limited to 1,609 bottles.

Brothers Francesco and Giacomo are rewriting Barolo's rules at their Vergne estate. With biodynamic vineyards and minimalist winemaking, they craft wines that buzz with energy. Their "FZ" (Fuori Zona) Nebbiolo challenges expectations, while the rare Controcorrente – made from Nebbiolo rosé – is pure liquid rebellion. The 2020 Barolo Fossati (their first vintage!) already shows cult-worthy depth. For drinkers who crave authenticity with a twist, Vaira Aurelj delivers.
